Edgun Stock with paint removed
This is the stock from Matador #2432 (a pretty new one).
It looks considerably different than the one sherrod sanded down.
I’m guessing that this wood is beech. It looks similar to maple.
Kinda pretty… eh?

Not sure if they are the same.I did add a little stain to mine after I got it stripped.But looking at yours I would skip on the stain.Wood looks good like it is.

Not for sure what that wood is Ted could be beach but sure looks like maple to me could be hard or my guess a soft maple, is it easy to get a nick in it or seem to be soft, or does it seem to be on the hard side? Beech or soft maple would be easy to make a mark on it, I am surprised like you said the last one I seen stripped was a different wood all together! Ed must be using a different wood than earlier models 😯
I would think twice about painting that.
an oil finish , rubbed in wont be shiny.
