I have a recipe from a 20+ year cook that was a friend of my Dads. Let me know if there’s any interest.

Pabs this order was shrunk from probably 1000 lbs. of beef cow. Lol. It would feed ten people twice to sleepy full levels.

Ok, here goes. I have only one Request here. When you all sit down to eat, give thanks to each other for your company. Ok this receipe is from Joe Trinidade, who used to be a cook at Buhach festas for 20 or 30 years and good friend of my Dads. When we used to go to Buhach festas Joe would always come over to talk with my Dad and as soon as he did that, you should of seen the kids bringing the meat, bread and cabbage over. Anyways one day he came into the shoe shop and I asked him for his receipe and he said he would make me one brought down in size. The years passed and he stopped in again and I reminded him about his promise to me……He went home and wrote the receipe and brought it back later that same day.
July 15th 1993
Joe Trindade soapa recipe
10 lbs. chuck roast (or other meat)
1 1/2 Gal. water
2 onions chopped
3 level Tbsp. salt (more or less to taste)
16 Oz. tomato sauce
12 Oz. ketchup
1 Cup wine
1 Tbsp. black pepper
6 Tbsp. Worchestershire sauce (Lee & Perrins)
2 Tbsp. pickling spice
1 1/2 Tbsp. whole allspice (Crushed)
2 Tbsp. cumin seed (or ground cumin)
4 Tbsp. garlic (granulated)
Large 4 Gal. pot w/lid
Bring onions, meat, salt, and 1 1/2 Gal. water to a low boil
add all other ingredients and simmer for three hours or until meat well cooked
(Now, this is where I believe he forgot a part of the receipe
after the meat is cooked you normally add cabbage somewhere in this process depending on how soft you like it)
Place sliced French bread in a pan with 3 or 4 mint spriggs on top
pour juice over bread (more or less, depending on how soaked you like it)……
End of receipe…..
